The roots of the vines sink deep into the sandy loam soil with granite, slate, and gneiss deposits allowing the plants to absorb the unique minerals. Only the best, fully ripe grapes are carefully harvested in order to be processed with great care in the wine cellar of our winery in South Tyrol. The temperature-controlled fermentation of the wines, which then mature in large and small wooden barrels in the cool cellar of our winery in South Tyrol, takes place slowly and gradually. We give our wines the time they need. Only when the wines have developed their full flavour and we are completely satisfied, are they bottled to rest for another several months.
